Schwenkbraten

Ingredients Needed:      FRESH Ham (NOT cured or smoked), about 7-8 lbs.
                                    2 T. salt
                                    1 T Paprika
                                    1 can of beer
                                    1 onion, sliced thin and separated into rings
 

Directions:

                                    Cut schwenk pieces from fresh ham. Place in dish or pan, cover
                                    with onion rings. Combine salt and paprika, sprinkle liberally
                                    over ham pieces and onion rings. Just moisten everything with
                                    beer. Cover and refrigerate overnight. Grill over coals (we use
                                    hardwood for the fire, but this will work all right with charcoal)
                                    until meat isn't pink anymore. Serve with potato salad and brotchen!
                                    (OK, that last part isn't really necessary, but remember the schwenk
                                    sales at MT??)
